The Delicatessen
I have always wanted my own restaurant. When I was knee high to a grasshopper my parents took me to Gino’s. Gino’s is a wonderful establishment in South Africa, where they make their own pasta, cheese, not to mention the wood fired pizza’s and many other traditional Italian treats. Run by Gino and his brother Domenic, who go home to Mama every Christmas so that they can keep up with her exacting standards.
On our first visit to Gino’s he invited my brother and I to toss our own pizza bases. Oh boy! Did we have fun! To be honest he must have secretly switched our very imperfectly tossed pizzas for one he had done earlier, but none the less my dream, to own my own restaurant, was set in motion.
We have spent a lot of time in Gino’s over the years and my Dad even built a couple of his restaurants. I learned to make many of their famous dishes and I even have a blueprint of the pizza oven tucked away for one day when we expand.
My mother is a fantastic chef, and it was in her kitchen that I was further inspired and encouraged to experiment with creative ideas, so when Aaron and I decided to go all out with the coffee we discussed out options and saw a gap in the market in Martinborough for a traditional delicatessen to compliment the coffee business. dm martinborough, delicatessen and coffee roaster was born.
